Saffron Rice With Barberries and Chicken (Zershak polo Ba Morgh)

ngerdients:

3 Cups long grain Basmati Rice                                  

2tbs cooking oil

1 Large onion

1 cup of Barberries(Zershak), washed and rinsed

1/2tsp Saffron, finely grounded

1 tsp sugar

6 Pieces of chicken( We can use Drumsticks, thigh and breast)

salt and pepper

Preperation:

Saffron: Get 2ts water and boil it in clear glass or a mug and add 1/2 finely grounded Saffron (recommended Saffron USA) and set it on a side for later.

Rice: Wash up Rice 4 times or more and let it be soaked for longer time, preferably 2 hours before cooking. It makes the rice come out longer and better.

In a large nonstick saucepan, cut the onion into small pieces and let it fry for a few minutes until lightly brown. Then cut the chicken into small pieces and add it to onion and let it cook for at least 15 minutes, make sure is cooked thoroughly. In a big pot, bring 2 liters of water to the boil. Add soaked rice with 2ts salt to boiled water and with a wooden spatula, mix the water and rice let it cook for 5-7 minutes until the rice is tender. Then get a strainer and add the rice cooked in water to it and empty the pot. Add 2ts water to the pot, 1ts oil and a few drops of saffron liquid to it in the pot and bring it to boil. Then add half of the rice to the pot and add the chicken already cooked on the top of the rice in the pot, and then add the rest of the rice on the top of the chicken. Then get 2 pieces of paper towel already attached to each other and put it on the top of pot and leave the pot lid on the top of pot. Set the temperature to low and let the steam come out the pot and wet the paper towel. This is how you know the rice is steaming and cooking.

In a small pan, add 2ts oil, and then Barberry and a touch of sugar and let it cooked not more than 2 minutes and set it aside for later use. The rice will be ready in 1 hour.

To serve:

Place cooked rice on a large serving plate mixed with chicken, pour some liquid saffron on the top and make the color yellow. Then add the Barberry on the top of the rice, as you see in the picture. Hope you enjoy. Please let me know if i can answer any question.
